  • 肉松300g
  • 沙拉酱100g
  • 小苏打5g
  • 白砂糖50g

Steps to make 艾叶青团

  • 1.艾叶清洗干净。
  • 2.锅里清水+小苏打(小苏打是为了保持艾叶的翠绿色)。
  • 3.将洗干净的艾叶放入有小苏打的水中,焯水2分钟。
  • 4.捞起已焯好的艾叶,放在清水下冲洗1分钟(冲点小苏打和艾叶的涩水)。
  • 5.将冲好的艾叶+清水放入破壁机,打成稀泥。
  • 6.将粘米粉、糯米粉和白砂糖混合均匀,用艾叶水揉面,揉成如图的面团。
  • 7.将面团均匀分成50g左右的小面团备用。
  • 8.蛋黄放锅里蒸熟(忘记拍照了)之后,压碎后与肉松混合,再加入沙拉酱(沙拉酱是为了将肉松和蛋黄粘合在一起)。
  • 9.将肉松蛋黄搓成大小均匀的团子(有多少颗面团,就准备多少颗肉松蛋黄团子)。
  • 10.将肉松蛋黄团子包入面团里面,搓成光滑的圆团。锅内放水和蒸层,铺上油纸或菜叶(防止青团粘在锅底),将揉好的青团放入锅内)。
  • 11.中火蒸10分钟后,改小火蒸5分钟。
  • 12.青团出炉,咬一口,艾叶的清香味和蛋黄肉松的香味一起,冲撞味蕾,美哉!
