天气转暖,春笋大量上市,年前腌制的咸肉晒干后也正新鲜,材料齐备,正好来做腌笃鲜。
所谓腌笃鲜, "腌",就是指腌制过的咸肉;"鲜",就是新鲜的肉类;"笃",就是用小火焖的意思。把咸肉、鲜肉和笋,经慢火煨而成的,口味咸鲜,汤白汁浓,肉质酥肥,笋清香脆嫩,鲜味浓厚。

    • 1.排骨洗净冷水下锅焯水。
    • 2.咸肉切成块。
    • 3.冷水下锅焯水。
    • 4.春笋剥去外壳,洗净切成滚刀块。
    • 5.在水中烧2分钟去除草酸。
    • 6.咸肉和排骨放入锅中,加料酒、姜和水煮15分钟。(没加限压阀)。
    • 7.放入笋块和适量盐继续煮至煮透。(没加限压阀)。
    • 8.黄色的笋块和红色的肉块并存,肉质酥肥,笋清香脆嫩,鲜味浓厚。
