老爸的老北京厨房(蔬菜大棚)--记忆中的味道(烧小萝卜)
烧小萝卜,本是老北京夏天消暑的一道热菜,老爸年年夏天都会吃,小的时候妈妈做这道菜的曾经还有一个典故;
八几年的时候,楼上来了一个洋小孩,叫汤密,是个混血儿,不到三岁,一来我家,就爱上了我家的饭菜,那会我才8岁,十足算个大姐姐,每次一到我家吃饭的时候,汤密就会准时来我家蹭饭,特别是到了这道烧小萝卜的时候,汤密一般都会主动闻着味来,用馒头沾着汤,吃的可香了;看见没有,这就是老北京菜的魅力,征服了这个洋娃娃;
老爸是个十足的老北京,我家的饭菜也是有口皆碑,我最大的心愿就是把这些老北京的味道传承下去,以后做给我的孩子吃,告诉她,这是妈妈小时候曾经的滋味;

  • 食盐5g
  • 白糖10g
  • 米醋10g
  • 生抽5g
  • 色拉油20g

Steps to make 老爸的老北京厨房(蔬菜大棚)--记忆中的味道(烧小萝卜)

  • 1.小萝卜洗净备用;
  • 2.切成滚刀块备用;
  • 3.锅内放水,烧开以后,放入小萝卜过水,1-2分钟即可;
  • 4.焯好的小萝卜放在盘子里面备用
  • 5.青蒜,葱,蒜,切好备用
  • 6.锅内重新放入色拉油,20g左右,烧到5成热以后,放入焯好的小萝卜,煸炒3-5分钟,中火;
  • 7.小萝卜煸炒到微黄的时候,放入事先切好的一半青蒜,一同煸炒,2-3分钟,青蒜煸炒出香味;
  • 8.小萝卜煸炒到微黄,青蒜的香味出来以后,约1-2分钟,放入米醋,白糖,生抽,食盐;比例为1:1:0.5:0.5;最后勾入芡汁即可;
  • 9.出锅,盛盘,撒上另外一半的青蒜配色即可;
