  • 奶粉(奶酪糊用)20克

Steps to make 雪域抹茶奶酪小贝,入口即化的奶酪酱,软糯香甜的抹茶蛋糕!

  • 1.先做蛋糕胚,取蛋黄4个、白砂糖15克、牛奶50克、玉米油40克依次搅拌均匀、完全乳化状态。同时取抹茶粉4克,加开水15,搅拌成浆状备用。
  • 2.把抹茶浆加入蛋糊搅拌均匀。
  • 3.筛入低筋面粉75克。
  • 4.按Z字型搅拌均匀后备用。
  • 5.取蛋白4个加入柠檬汁适量开始打发,白砂糖25克分三次在打发的时候加入。
  • 6.打发到提起打蛋器有微微坚挺有弹性的小弯钩状态就行了。
  • 7.先取1/3蛋白糊加入蛋黄糊中,用刮刀翻拌均匀。再取1/3蛋白糊加入蛋黄糊中,用刮刀翻拌均匀。
  • 8.再全部倒入蛋白糊中,用刮刀翻拌均匀。
  • 9.从30厘米的高处把面糊倒入烤盘中。
  • 10.然后用刮刀抹平。
  • 11.提起来震2下,去掉大气泡。烤箱165℃提前预热,烤18-20分钟,上层可以放一个烤盘,可以有效防止抹茶变色。
  • 12.准备一锅热水,上面放一个盆,把室温软化的奶油奶酪100克放进去,搅拌均匀,加入白砂糖20克、牛奶20克,搅拌至无颗粒的糊状。
  • 13.加入奶粉20克,继续搅拌。
  • 14.直到把奶粉全部混合均匀,呈糊状即可。
  • 15.取出烤好的蛋糕胚,放凉后用模具切出形状备用。
  • 16.取出切好片的蛋糕胚,在一片蛋糕胚上抹上奶酪糊。
  • 17.盖上一块蛋糕胚,四面全部抹上奶酪糊。
  • 18.在椰蓉里滚一圈,沾满椰蓉即可。
  • 19.好吃到停不下来的雪域抹茶小贝完成了。
  • 20.一口下去,入口即化的奶酪酱,软糯香甜的抹茶蛋糕,外层超香的椰蓉,太好吃啦!
  • 21.吃了一块还想再吃下一块,根本停不下来。
