【番茄配方】杏仁面包——形似花朵,味道香浓
烘焙爱好者平日里使用频率最高的模具就是6、8寸的活底蛋糕模,无论是戚风蛋糕、慕斯蛋糕还是乳酪蛋糕都可以用到活底蛋糕模。很多朋友不知道活底蛋糕模除了制作蛋糕之外还是可以用来做面包的哦。只需要一个简单的小技巧就能让活底蛋糕模摇身一变成为面包模具。今天我就就来用活底蛋糕模制作一款杏仁面包,添加了杏仁粉的面包味道更加醇厚,方子中没有用到黄油,取而代之的是更加清爽的淡奶油,味道和口感上都和用黄油做出来的面包大不一样哦。面包表面撒上杏仁片做出来的圆形面包形似花朵,无论是自己吃还是送亲朋都是“任性”有余,叫你颜面大增。

  • 蛋液20g
  • 85g
  • 淡奶油75g
  • 3g
  • 35g
  • 杏仁粉30g
  • 酵母3g
  • 杏仁片10g(装饰)

Steps to make 【番茄配方】杏仁面包——形似花朵,味道香浓

  • 1.盆中加入除了杏仁片以外的原料
  • 2.参照方子“手工揉面”或者方子“面包机揉面”完成揉面,发酵到两倍大小后排气滚圆
  • 3.现在我们来给普通的蛋糕模做不沾处理,先抹上一层植物油
  • 4.再撒上薄薄一层高筋面粉,这样处理后的模具一点都不沾粘哦
  • 5.面团分割成5个60g和一个80g的小面团滚圆,剩下面团量可以再做一个六寸蛋糕模的
  • 6.80g的面团放入模具中央,四周均匀的放上5个60g的面团
  • 7.放到温暖湿润处二次发酵到两倍大小,刷蛋液
  • 8.撒上少许杏仁片做装饰
  • 9.180度上下火烘烤20-25分钟,表面金黄即可
