酸奶棒糖棒冰
家里的小朋友小时候容易感冒,很少很少给他吃棒冰,往年天一热,还要贴三伏贴,一天三伏贴,几乎整个夏天都要禁吃生冷,越禁越想吃,天天盘算天气预报,关注气温,就盼着能吃棒冰,为了给他解解馋,就用棒棒糖模具做几个,每次吃一个,不至于量太大,又能解馋,自己也很喜欢。

Steps to make 酸奶棒糖棒冰

  • 1.200ml奶杯6只,探针式温度计,一双筷子,都用沸水煮开消毒,沥干。
  • 2.奶锅每次一升奶45克砂糖。砂糖称量入奶锅。
  • 3.倒入牛奶小火煮,搅拌使砂糖融化。(我一般煮到40度左右,砂糖已经完全融化了)牛奶温度35-40,到入酸奶菌(也可以留一罐自制酸奶当菌种)。
  • 4.搅拌50次以上,使酸奶菌完全融化。
  • 5.过筛倒入玻璃杯,封上保鲜膜。(图片是2L,13瓶)
  • 6.烤箱发酵模式,上下管30-35度,常通8小时。(22:00到上午6:00,正好是峰谷电半价,呵呵)
  • 7.入冷藏钝化1小时。一周内味道都不错。
  • 8.由于糖量减了不少,比较清淡,可以在做棒冰时加自己喜欢的水果,炼乳,巧克力,这次加了适量白砂糖。
  • 9.来点蔓越莓。
  • 10.混合。
  • 11.勺子小心倒入模具。200ml酸奶,做了12个棒糖。
  • 12.包上保鲜膜,送入冻箱。第二天尝鲜。
  • 13.挺受小孩子欢迎的。
  • 14.自己做嫌麻烦的话,可以直接用普通酸奶代替,普通酸奶用纱布袋装好了沥去部分水分,做出来很好吃,几乎没有冰渣。
