萝卜干包子
总是听奶奶讲小时候条件不好,每到冬天都是大白菜,为了改善生活,总是在秋天晒很多菜干,比如萝卜干,胡萝卜干,南瓜干,豆角干等等……而我对萝卜干情有独钟,大白萝卜洗净切薄片,晒至脱干水分,再把萝卜干放在水中洗净放蒸笼上蒸熟或者水里煮熟,再次晒干,就可以放起来随吃随泡,特别方便,我最喜欢吃的就是萝卜干包子,今儿就解解馋

Steps to make 萝卜干包子

  • 1.把萝卜干泡发好,洗净(中间要换很多次水,一直到泡萝卜干的水变清)切碎备用,今天用的是晒的萝卜丝,其实还是晒的萝卜片更好吃一些
  • 2.锅里加入食用油,油热以后就大蒜末放入锅中煸香(一定要用大蒜末炝锅,这个味道更萝卜干简直是绝配,不用任何别的调料)
  • 3.把萝卜干碎放入油锅中煸炒片刻,等放凉待用,这时候将泡发的粉条切碎,韭菜切碎
  • 4.先把粉条碎放入炒好的萝卜干中搅拌均匀
  • 5.等馅儿变温后再放入韭菜(太热会把韭菜烫熟),调料搅拌均匀
  • 6.将发酵好的面团,揉光切小剂子擀皮儿
  • 7.包好放入蒸屉中,今儿包的是长条形,这样可以多放点馅儿,个人偏好馅儿大点的,凉水起锅,锅里冒气后20分钟即可,关火焖两三分钟再揭开锅盖
  • 8.香喷喷的包子出锅喽,再搭配一个红油醋料,一次吃两个都是小意思
