脆鸡汉堡
天冷了,来一个汉堡吧~~~

Details of ingredients

  • 高粉140g
  • 低粉40g
  • 奶粉15g
  • 白糖20g
  • 无盐黄油20g
  • 酵母粉2g
  • 牛奶80g
  • 全蛋液30g
  • 1g
  • 鸡腿1个

Steps to make 脆鸡汉堡

  • 1.把除黄油以外所有材料放入盆子里,用筷子搅拌成团
  • 2.面团移动和面垫上进行和面
  • 3.反复搓揉至面团光滑,出粗膜
  • 4.在面团中间包入软化的无盐黄油
  • 5.继续搓、揉
  • 6.揉至面团出现不易破的薄膜
  • 7.收圆放入盆子里,盖上保鲜膜进行基础发酵2-2.5倍大
  • 8.取出发酵好的面团,排气后分割为5等份
  • 9.把每一份小面团都滚圆,依次做好,排放入烤盘
  • 10.发到2倍大后,表面刷上蛋液,撒上白芝麻(本来应该再发多一会,因为没有时间等,就进去烤了).
  • 11.放入预热好的烤箱,中层,175度,热风,14分钟左右
  • 12.烘烤过程注意观察上色情况,上色后要盖上锡纸.
  • 13.鸡腿1个,去皮去骨后绞成肉糜
  • 14.在肉糜里加入适量胡萝卜丁,1勺葱姜水,葱白,适量盐,生抽,蚝油,生粉,顺时针搅拌上劲
  • 15.取1半馅料,压扁后在手里来回摔20下
  • 16.两面都粘上面包糠
  • 17.放入预热好的空气炸锅,200度,烤15分钟至肉饼香脆即可取出
  • 18.面包横切为2半
  • 19.抹上沙拉酱,放上生菜再挤沙拉酱,摆上香脆肉块即可
