紫薯花朵面包

Steps to make 紫薯花朵面包

  • 1.称量好所有食材。
  • 2.将除了黄油以外的原料投进面包机。启动一个和面程序,揉至可以拉出厚膜的状态。
  • 3.加入软化的黄油,揉至半透明可以拉出透明薄膜的扩展阶段。
  • 4.进行基础发酵。发酵好的面团,用手指蘸面粉插入面团,小洞既不回缩,也不坍陷即可。
  • 5.发酵好的面团排气,分成6等份,分别滚圆,松弛15分钟。
  • 6.紫薯上锅蒸熟,用勺子碾压成紫薯泥。
  • 7.用手搓成圆球,分成6等份。
  • 8.面团擀圆,包上馅料。包好,压扁。
  • 9.用剪刀在面皮上剪6个开口。
  • 10.依次做好所有的花朵面包生胚。放在温暖湿润处进行最后的发酵(最后发酵适宜温度35度-38度),发酵好的状态:手指轻按面团,手按处不会回缩,且略有张力。
  • 11.发酵好的面团在表面刷上蛋液,在中间撒上白芝麻。
  • 12. 放入预热好的烤箱中层,180度烘焙15-20分钟。
  • 13.成品图。
