湖北名菜--------------【红烧武昌鱼】
本人是个特爱吃鱼得人,可以没有肉,鱼我家是一星期要吃三四次,也许是生在白洋淀的原故,我们那里的人都很喜欢吃鱼。武昌鱼在我们那里叫鲂鱼,武汉这边叫鳊鱼,或者武昌鱼,为了更成突出地域特色,就叫【红烧武昌鱼】这还是湖北名菜呢,红烧,清蒸,油焖是很多酒店里的特色菜,咱不下馆子,自己烧着吃!

在我们那里(烧)熬鱼就要配玉米面饼子,或者窝窝头,那才是绝配,吃起来香喷喷的,玉米面饼子蘸着汤吃,把鱼的鲜美都收入口中,为了这鱼,专门做的玉米面窝窝头,只是面很软,蒸好后软塌塌的,不太美观,我用的是烫面加发面法,味道清甜,口感松软!

  • 武昌鱼1条(1斤左右)
  • 香醋1勺半
  • 味极鲜酱油1勺
  • 蒸鱼豉油半勺
  • 蚝油1勺
  • 生姜2片
  • 大蒜2瓣
  • 干辣椒2个
  • 花椒10几颗
  • 大料1个
  • 香葱碎少许
  • 胡椒粉少许
  • 鸡精少许
  • 黄酒1勺

Steps to make 湖北名菜--------------【红烧武昌鱼】

  • 1.武昌鱼去鳞,去掉内脏,鱼肚里面的黑膜,洗净,背部切十字花刀,生姜去皮切片,大蒜去皮拍松,辣椒洗去表面灰尘,大料一颗,花椒十几颗,香葱洗净切碎备用
  • 2.取一碗,放入大蒜,花椒,大料,干辣椒,一勺半香醋,一勺蚝油,一勺料酒,一勺一品鲜酱油,半勺蒸鱼豉油,调成碗汁备用,
  • 3.炒锅烧热放油,(一定要烧热后才能放油)
  • 4.把鱼放入锅中,用中小火将鱼煎至两面金黄,
  • 5.放入姜片炸香,
  • 6.调入碗汁,兑入温开水,大火烧开,转中小火(期间把鱼翻个面)
  • 7.烧至汤汁有些浓稠,放入适量盐
  • 8.汤汁变少,更加浓稠,调入胡椒粉,鸡精,关火
  • 9.撒入适量香葱碎
  • 10.起锅装盘即可食用。
