  • 1.分离蛋白和蛋黄。
  • 2.将20g砂糖和50ml牛奶倒入蛋黄盆中,搅至均匀、糖全部融化。
  • 3.分次加入50ml色拉油,使蛋液与油融为一体。
  • 4.将低筋面粉和盐过筛后筛入蛋黄盆中。
  • 5.搅拌均匀呈蛋黄糊。
  • 6.蛋白加入几滴柠檬汁。
  • 7.低速打至粗泡状。
  • 8.分三次加入60克细砂糖,中速打发。
  • 9.打至干性发泡,约为9分发。
  • 10.取1/3蛋白加入蛋黄面糊中切拌均匀。
  • 11.再将搅拌好的蛋糕糊倒回蛋白中,快速切拌均匀。
  • 12.将搅拌好的面糊在桌上震几下排出里面的起泡。
  • 13.将蛋糕糊分别倒入纸杯中,约为纸杯的8分满。
  • 14.烤箱预热170°后,以烤盘盛托,放入倒数第二层、烘烤40分钟。
