Steps to make 豆酱炒薯粉

  • 1.全部材料。薯粉用开水泡软,泡到其他材料准备就绪就下锅炒。甜椒和鲜菇洗干净切细。
  • 2.火锅猪颈肉片切小块。用麻油,生抽,糖,蚝油腌制三分钟。
  • 3.下底油,把猪肉炒到半熟倒入鲜菇继续翻炒一分钟。
  • 4.加水,生抽,料酒,味淋,四者比例4:1:1:1,加一茶匙糖。
  • 5.把泡软的薯粉放到锅里搅散。这时薯粉泡了大概15分钟,勉强能嚼动但较硬。
  • 6.薯粉翻炒均匀加入甜椒。盖上盖子,中火焖1-2分钟。中途可开盖检查薯粉软度。
  • 7.薯粉完全变软,转小火,加四茶匙豆瓣酱。豆瓣酱本身很咸,无需另外加盐。
  • 8.撒一点黑椒调味。翻炒均匀。
  • 9.熄火,撒一把葱花,盖上盖子焖一分钟即可。
  • 10.在等吃的一分钟里,煮个温泉蛋。完成。
