Steps to make 清蒸鲈鱼

  • 1.新鲜刚宰杀的河鲈鱼一条,个头大概在1斤2两左右为宜.
  • 2.鲈鱼清洗干净后去头去尾。
  • 3.鲈鱼从背部切开,肚子部分不要切断。
  • 4.鲈鱼里加盐10克、米酒20克、蒸鱼豉油20克、花椒10几粒、大料1粒、葱丝少许腌制30分钟。
  • 5.姜片和火腿切片后摆在盘子底部,放上鲈鱼,摆好造型。上锅大火烧开冒起后蒸10分钟。
  • 6.小火2-3分钟爆香花椒,鲈鱼出锅后加少许葱丝和辣椒,趁热浇上花椒油即可。
