牛角汉堡

  • 砂糖50g
  • 黄油38g
  • 全蛋液40g
  • 酵母4g
  • 2.5g
  • 淡奶油25g
  • 高筋面粉280g
  • 牛奶110g
  • 蛋黄液少许
  • 生菜叶6片
  • 蛋黄酱少许
  • 培根1包
  • 番茄3个

Steps to make 牛角汉堡

  • 1.将除黄油以外的所有面包材料放入面包机内
  • 2.启动和面程序,20分钟
  • 3.揉至10分钟时检查面团,能拉厚膜时放入黄油,揉至能拉出手套膜
  • 4.面团搓成圆形,放入盆内,盖上保鲜膜一发
  • 5.手沾面粉插入面团,不塌陷不回缩即发酵完成
  • 6.托出面团,用排气擀面杖排气
  • 7.将面团平均分成6份,搓成水滴状,盖上保鲜膜松弛15分钟
  • 8.将面团擀成长20厘米,高35-40厘米的三角形
  • 9.从下往上卷好
  • 10.依个放入烤盘内
  • 11.烤箱启动发酵功能,设置38度,50-60分钟
  • 12.制作蛋黄液:10g蛋黄+20g牛奶拌匀过筛装入喷壶内,均匀地喷洒在面包上
  • 13.烤箱预热170度,18分钟
  • 14.面包出炉马上放至晾架上放至温热,面包刀对切备用
  • 15.培根片煎至金黄色,番茄切片,生菜洗净擦干
  • 16.在牛角包上挤上蛋黄酱,放上生菜,培根,番茄,再挤上蛋黄酱
