杏鲍菇虾味酱
看看瓶子里还有些自制的黄豆酱,就又想做点酱来吃,这放一些虾仁和虾皮,做成虾味的酱,杏鲍菇的香味和虾仁的鲜味搭配一起,做成的酱拌面吃,沾馒头吃都好吃哩。我儿子是最爱这种酱的,每次做了,他都吃不够。

  • 虾皮10g
  • 郫县豆瓣10g
  • 黄豆酱30g

Steps to make 杏鲍菇虾味酱

  • 1.先备好干虾仁和虾皮,
  • 2.把虾仁提前用水浸泡至软
  • 3.把黄豆酱和郫县豆瓣酱按3:1的比例配好,花生米用水泡开的,杏鲍菇切丁。
  • 4.锅中放一点点油煎杏鲍菇,煎至杏鲍菇变软变黄,水分蒸发出来,这样的杏鲍菇容易入味,煎好后盛出备用,
  • 5.再加入些油,用比较肥的五花肉,切丁入锅煎出油
  • 6.把煎好的肉扒到一边,倒入两种酱,炒至酱出红油,与肉混合到一起炒均匀。
  • 7.放入泡好的虾仁和花生米,煎好的杏鲍菇和虾皮也都倒入
  • 8.翻炒均匀
  • 9.加适量水煎煮约5分钟
  • 10.收汁后放入葱末和少量的辣椒
  • 11.翻炒均匀即出锅
