南瓜小蛋糕

  • 1.准备全部食材,称出用量
  • 2.将蛋黄蛋白分离,分别装在干净的盆里,要无水无油

  • 5.加入牛奶搅拌均匀
  • 6.筛入面粉,用刮刀翻拌均匀
  • 7.蛋白分三次加入细砂糖,电动打蛋器开始打发,第一次打发到出现大鱼眼泡时加入20克,加入几滴柠檬汁,第二次泡沫细腻时加入20克,第三次出现轻微纹路时,加入余下的全部糖,每次加完都继续搅打,直到打发到出现两个笔直的尖尖角
  • 8.盛出三分之一蛋白入蛋黄糊里,并翻拌均匀
  • 9.再将拌好的蛋黄糊倒回蛋白里
  • 10.快速的翻拌均匀,成细腻顺滑的蛋糕糊
  • 11.倒入涂抹了黄油的南瓜模具里,(4个南瓜模,一个4寸蛋糕模具)八分满既可
  • 12.放入预热好的烤箱里,中层,上下火,155度,烤30分钟
  • 13.出炉后立刻倒扣,彻底冷却后,取下模具,掰开看一下,烤的很成功,组织细腻蓬松
  • 14.四寸的,金黄色的南瓜小蛋糕很可爱
