排骨炖土豆
入秋后多给孩子吃这菜,排骨软烂鲜香,土豆滑糯入味,解馋又滋补。

Steps to make 排骨炖土豆

  • 1.买回来的新鲜排骨,入冷水浸泡半小时左右,泡出血水,再反复清洗干净。
  • 2.土豆去皮洗净,切滚刀块。如果有小土豆更好,不用切,整个小土豆炖着吃特别好吃。
  • 3.锅中不用加油,排骨直接入锅翻炒,炒至没有汁水。
  • 4.炒好的排骨,看着是不是比焯水的排骨肉质紧实,没错,吃起来口感还好。
  • 5.炒锅加入适量的油,爆香花椒粒,取出扔掉,然后爆香葱姜,加入排骨翻炒。
  • 6.加入适量的生抽、料酒翻炒上色。
  • 7.加入适量的水,略多一点,少加一点醋,提味还能促进排骨快熟(可以不加),大火烧开,中火炖10分钟左右。
  • 8.排骨基本炖熟,加入土豆、盐、冰糖,继续中火炖10分钟左右。
  • 9.大火收汁,不要收得太干,汤汁泡饭特别香,小朋友最喜欢。
  • 10.出锅装盘。
