乳酪奶油霜杯子蛋糕
这次作为活动嘉宾我参与了手游碎碎曲奇白色情人节主题活动,主办方要求我要现场传授嘉宾们制作杯子蛋糕,当然,活动中做的蛋糕绝对比这个简单,零基础的嘉宾们是完全不需要打发蛋白的,确切的说他们做的是马芬,为了装饰现场,活动当天上午我还在家特意做了几个,那天做的马芬膨起的特别漂亮,遗憾我当时时间紧迫(迟到了)都来不及给它们拍个照片留念....唉。
今天做的这款蛋糕上面的奶油霜和活动那天不同,这款的味道相当厚重,且纹理粗糙,原因是做法非常简单,初学做它信心倍增。

  • 鸡蛋2枚
  • 红曲粉13g
  • 玉米油25ml
  • 细砂糖45g
  • 低筋面粉40g
  • 奶酪225g
  • 糖粉110g
  • 黄油135g

Steps to make 乳酪奶油霜杯子蛋糕

  • 1.蛋黄蛋白分别放入无油无水容器;
  • 2.蛋黄内加入10g细砂糖用手动打蛋器搅打均匀;
  • 3.筛入低筋面粉、红曲粉拌匀备用;
  • 4.蛋白用电动打蛋器打至鱼眼发泡状态后加入余下的三分之一细砂糖;
  • 5.继续搅打至蛋白很细腻,再加入三分之一细砂糖,当蛋白滴落后痕迹不消失放入最后的细砂糖;
  • 6.蛋头提出后蛋白弯曲小角还要继续再打下去哦;
  • 7.最后蛋白呈尖角状的干性发泡就可以了;
  • 8.取一部分蛋白到面糊内拌匀;
  • 9.然后将全部面糊倒入蛋白中拌匀;
  • 10.将面糊倒入纸杯中7-8分满;
  • 11.烤箱预热150度,烤盘放入烤约30分钟;
  • 12.黄油自然软化后放入糖粉,用电动打蛋器打发至膨胀颜色变浅色并呈现出羽毛状态;
  • 13.加入软化的奶酪再次打发融合;
  • 14.将奶油霜倒入裱花袋内,表在蛋糕上即可。
