  • 鸡蛋液30g
  • 糖粉50g
  • 牛奶180g
  • 淡奶油150g
  • 鸡蛋2个

  • 吉士粉(custard powder)1茶匙(可不加)

Steps to make 德国布丁塔

  • 1.黄油软化,和塔皮的材料放在大碗里。
  • 2.用手抓捏成团,包上保鲜膜,醒20-30分钟。(不要揉面,防止起筋影响酥度。)
  • 3.醒面的时候,可以做塔水(布丁液),把牛奶,淡奶油和糖放入小锅里,小火拌至糖溶化。(不要煮开,温温的,糖就溶化了。)
  • 4.加入鸡蛋和吉士粉拌匀。(没吉士粉可以不加。)
  • 5.把布丁液过筛备用。
  • 6.把塔皮分8份,每份54克。把塔皮按压在小号纸杯里,底部尽量按薄。(手法跟做蛋塔皮一样。)
  • 7.全部做好。
  • 8.用叉子在底部搓几下,防止烤的时候鼓起。
  • 9.把塔水(布丁液)倒入塔皮杯子里,可以9分满,刚好8个。
  • 10.放入预热好的烤箱,华氏420度(摄氏200度)烤30分钟,烤到20分钟塔皮上色后,盖上锡箔纸烤。
  • 11.出炉。
  • 12.放凉。

  • 14.塔皮香酥,布丁嫩滑。
