麻婆豆腐

  • 猪肉末150克

  • 小米椒3个

  • 生抽2小勺
  • 蚝油1小勺
  • 料酒1小勺
  • 白糖半小勺
  • 红油豆瓣酱1小勺
  • 辣椒酱1小勺
  • 老抽1小勺
  • 花椒粉少许
  • 白胡椒粉少许
  • 淀粉1小勺

Steps to make 麻婆豆腐

  • 1.肉末里加入盐、生抽、蚝油、料酒、白糖、食用油,顺一方向搅拌均匀。
  • 2.姜、葱、蒜、小米椒洗净、切末(粒),备用。
  • 3.豆腐切小方块,在盐水中浸泡约10分钟,捞出滤干水分,备用。
  • 4.炒锅放油,放入姜、葱、蒜炒香,放入红油豆瓣酱、辣椒酱、小米椒,炒出红油。
  • 5.放入肉末,翻炒至变色。
  • 6.倒入小半碗清水,大火煮开,放入豆腐,调入老抽、花椒粉、白胡椒粉,锅铲轻轻推几下,尽量不要翻动,免得豆腐太嫩易碎,中火炖几分钟入味。
  • 7.倒入淀粉水勾芡至汤汁微稠。
  • 8.撒上葱花,出锅。
  • 9.色泽红亮,麻辣鲜香。
  • 10.色香味俱全。
