老北京绿豆糕
传统医学认为,绿豆性味甘寒,无毒,有清热解毒,祛暑止渴、利水消肿、明目退翳、美肤养颜之功效。因此绿豆糕是很好的消热解毒,保肝益肾的消夏小吃。

这款绿豆糕参考了“kiss战女”分享的菜谱和老北京传统绿豆糕的制作方法,在其基础上稍作修改而成。此绿豆糕在味道上得到了家人的一致肯定,但在湿度上还需做些调整,稍微有些干,因此脱模切块时掉渣较多。

Steps to make 老北京绿豆糕

  • 1.称量200克绿豆面,装入小盆中,入蒸锅蒸30分钟;
  • 2.蒸好的绿豆面已经变硬结块;
  • 3.需用勺背碾碎;
  • 4.在绿豆面中间刨一个坑,将白糖倒入坑中;
  • 5.将热水倒在白糖上;
  • 6.待白糖融化,然后与豆面充分搅拌均匀;
  • 7. 此时会有部分豆面结块,需将绿豆面过筛;
  • 8.结块的部分会留在筛上,将这部分豆面装入保鲜袋,用擀面杖擀碎后,再次过筛;
  • 9.过筛后的绿豆面;
  • 10.将雪方模内部刷一层油,将过筛后的豆面填入;
  • 11.盖一张油纸,用另一雪方模压平表面,依此将所有豆面填入雪方盒内压实;
  • 12.将雪方模入锅蒸25分钟;
  • 13.出锅揭去油纸晾凉;
  • 14.脱模后切成小块即可。
