Steps to make 圣诞双色泡芙塔,高颜值外表,超甜蜜的奶油,酥脆的泡芙。

  • 1.我们先做酥皮,取室温软化完全的无盐黄油45克,筛入低筋面粉40克、糖粉25克,放在一个盆里。
  • 2.用手揉成团。
  • 3.均匀的分成2份,一份面团加入红曲粉2克。
  • 4.揉至颜色均匀。
  • 5.另一份面团加入抹茶粉2克。
  • 6.揉至颜色均匀。
  • 7.两个面团各自盖上油纸,用擀面杖擀成2毫米左右厚的均匀薄片,放冰箱冷藏定型备用。
  • 8.接着准备做泡芙体,把无盐黄油50克、清水120克、低筋面粉60克、鸡蛋2个,都均匀的分成2份备用,低筋面粉记得过筛一下,防止待会结块。先取无盐黄油25克、清水60克放在一个锅里,煮至黄油融化,稍微沸腾一下后关火。
  • 9.倒入筛好的低筋面粉30克,用刮刀拌匀,开小火继续用刮刀拌2分钟左右,面团有不粘有光泽后关火。
  • 10.面团放在一个盆里摊开稍微放凉一会,室温的鸡蛋1个打散备用。
  • 11.等面团稍微不太烫了后,分三次加入蛋液,记得每次用刮刀把蛋液全部拌进去后,再加蛋液。
  • 12.拌到提起刮刀,面糊呈倒三角滑落的状态就好了。
  • 13.把准备好的面糊装入裱花袋,挤在烤盘上。
  • 14.取出冷藏定型好的酥皮,用一个裱花口抠出一个个小圆。
  • 15.把一个个的小酥皮盖在挤好的泡芙上。
  • 16.烤箱最好提前预热220℃。首先上层220℃、下层180℃,先烤15分钟。接着上层180℃、下层170℃,再烤10分钟。
  • 17.趁烤的时候我们做奶油内馅,取淡奶油200克,白砂糖15克,开始打发。

  • 19.把奶油馅挤入冷却了的泡芙里面。
  • 20.用A4纸做一个尖塔,外面再包一层铝箔纸,不要用油纸会沾不住。同时巧克力30克切碎。
  • 21.巧克力隔热水融化,装入裱花袋待会当粘合剂备用。
  • 22.融化的巧克力挤在泡芙的几个支点,一个个的慢慢做成塔状。
  • 23.最后撒一点糖粉装饰一下。
  • 24.双色泡芙塔完成O(∩_∩)O
  • 25.圆嘟嘟、胖呼呼,圣诞色萌萌嗒。一口一个,满满甜蜜,浓浓圣诞气息。
