炎炎夏日最爱冰爽弹牙冷面——汤汁是灵魂
昨日已夏至,进入暑热天。这样纸的炎热天气,最爱来上一大碗冰爽沁凉的韩式冷面,那冰甜酸爽的感觉让人魂牵梦萦。可是韩国料理的冷面,牛肉不够厚、冷面不够多,往往不能吃过瘾,不如在家自己做,干净又好吃!
韩式冷面好吃的关键是对汤汁,这是冷面的灵魂。可以用牛肉清汤作底,但切忌让汤上悬浮着油腻腻的油花,太过油腻的面汁还没等吃,只消看上一眼,就会胃口全无。我最爱的是用清水作底的汤汁,其实,大热天用清水做底的吃起来更舒心!
接着要用最佳配比来调对冷面的汤汁,生抽2大勺、糖2大勺、梨汁3大勺、苹果醋5大勺,还有适量盐,这个根据个人喜好,还可以再加入鸡精,我们家里一般是不放滴。
除了调出好汤汁,还有关键的一步,就是煮好的面条一定要多次过冷水,直到水变清才行,这样做出来的冷面口感才会上乘。
调好的汤汁放进冰箱冷藏1小时,浇在弹性十足的荞麦面上,再加上牛肉片、泡菜、鸡蛋等配料,吃起来酸酸甜甜,滑顺润喉,冰爽弹牙!

  • 1.1、先来调汁,干净容器里倒入生抽、苹果醋。
  • 2.2、加入盐和糖。
  • 3.3、倒入提前用料理机榨好的梨汁,再加入清水调匀,放入冰箱冷藏1小时。
  • 4.4、黄瓜切丝,鸡蛋对半切开。
  • 5.5、酱牛肉切片、梨切丝。
  • 6.6、韩国泡菜切丝,将提前泡水半小时的乔麦面放进沸水中煮2分钟捞出过冷水。
  • 7.7、乔麦面放进大碗,摆上切好的泡菜、黄瓜、酱牛肉、鸡蛋、梨丝,挖上韩国辣酱。
  • 8.8、放上冰块,浇上冰爽的汤汁,撒上芝麻,直接开吃吧。
