    Steps to make 【碧波芭蕾】——捶虾翡翠珍珠面

    • 1.准备材料
    • 2.将虾去头壳,去虾线,留尾,背部剖开,用盐、料酒、鸡精腌制
    • 3.菠菜去根,洗净,焯水
    • 4.菠菜榨汁备用
    • 5.粉中加入适量的菠菜汁、和一个蛋清,搅拌均匀呈糊状
    • 6.锅中将水烧开,用铁篦子将面糊漏到锅中即成珍珠面
    • 7.煮至浮起,捞出备用
    • 8.将虾撒干淀粉,用擀面杖捶成大片
    • 9.另起锅倒入鸡汤烧开放入捶好的鲜虾片,打卷即可,淋香油加少许盐调味
    • 10.将虾放入碗中,放入珍珠面,浇上调好味的鸡汤即可
