Steps to make 开胃小菜-私家泡菜

  • 1.准备所需蔬菜。家里有黄瓜,胡萝卜,大白菜的话都可以加进去。
  • 2.准备所需调料。家里有蒜的话最好加进去一些。在这步可以切片备用。
  • 3.把大萝卜切成薄片。
  • 4.包菜切块放入无油的盆中。有其他蔬菜的话,同样的切成大小差不多的块或者条。
  • 5.撒上所有调料。很关键的是,不仅盆内,整个过程都要防油。
  • 6.带上手套或者保鲜袋,开始揉搓蔬菜。把盐糖一直揉到没有。
  • 7.揉上一会之后,蔬菜就开始出水,一直揉到盆里的蔬菜像是少了一半一样,盆里出了很多的水就可以了。
  • 8.找保鲜膜盖上,拿重物压到菜上。我找了一大牛奶瓶,灌的水。
  • 9.压一晚上,或者8小时以上,会看见盆里的水越来越多。
  • 10.将压好的蔬菜和出的水全部放到密封盒里面,或者家里的密封坛子里面。那种肚子大,口小的坛子最好,一般情况下,蔬菜压出来的水,刚好在坛子里面没过蔬菜。
  • 11.将密封盒或者坛子放到厨房阴凉地方,密封十天到2周左右即可食用。
