北方人最爱的就是各种蔬菜拌面条,因为煮完需过凉水,有地方叫捞面;菜料有丰富的汤汁,面条更爽利、入味,也因此有地方叫卤面。甭管叫啥,总之,就是有滋有味,水水灵灵,简单省事。

秋天了,黄瓜不要只是凉拌或者直接啃,切丝、切丁,跟鸡蛋或者各种肉类搭配做成“汆儿”或者“卤”,就是绝佳的面条CP。

  • 面粉用凉水250克
  • 大蒜1头

Steps to make 鸡肉黄瓜拌面

  • 1.中筋面粉和室温凉水入盆;面粉的吸水率不同、四季环境温度和湿度不同、手擀面和机压面的面团软硬度不同,根据这些情况来调整面水比例。
  • 2.揉成无干粉的面团,盖盖子饧10分钟。
  • 3.手擀面或机压面均可,我用压面机压的宽面条。
  • 4.烧水煮面条这步可以放在准备菜料时进行,因为面条煮熟久放会失去弹性。
  • 5.黄瓜、小葱清洗干净,鸡大胸一块,大蒜一头。
  • 6.黄瓜切粗丝,鸡胸顺丝切粗丝,小葱切末,大蒜切片。
  • 7.热锅凉油,鸡肉丝、蒜片、小葱同时入锅煸炒出香味。
  • 8.鸡肉变色后倒入黄瓜丝。
  • 9.加适量盐使黄瓜微出汤,再倒适量生抽、酱油增色添香。
  • 10.加半碗水增加汤汁;因为要拌面条,多煮2分钟使黄瓜丝变软,口感与柔软的面条更契合。
