【生滚鸽子粥】
众所周知,冬季里要想养生保健,增强体质,煲粥是绝佳的选择,而生滚粥是广东传统粥品之一,用预先煮好的白粥加新鲜肉料一锅滚熟而成。具体做法是用小砂锅把白粥烧开,下肉料,滚后片刻即离火,放进切碎的蔬菜菜粒便可食用,食时佐以胡椒粉,味道更鲜美。
中医认为鸽肉有补肝壮肾、益气补血、健脑补神、清热解毒、生津止渴等功效,故民间有“一鸽胜九鸡”的说法。这次做的鸽子粥,用香菜碎代替了蔬菜粒,吃起来更是增添了别样的香味。

Steps to make 【生滚鸽子粥】

  • 1.鸽子去毛去内脏,这一步交给卖鸽子的老板做就行了;
  • 2.大米准备好,煮粥的最好用香米或长粒香稻米;
  • 3.香菜叶洗净;
  • 4.大米洗净放入沙锅中,倒入适量清水,大火烧开后开盖,转中小火煮熟,时间要看各自的火力和粥的多少而定了,我这锅大约用了15分钟;
  • 5.煮粥的同一时间,把鸽子剁成小块;
  • 6.香菜切碎备用;
  • 7.锅内入适量油烧至五成热,下入鸽子肉翻炒至变色即可关火;
  • 8.待白粥煮熟后,把鸽子肉放入沙锅中,保持开盖状态继续煮;
  • 9.放入姜片,火力保持在沸腾程度,用勺子顺同一方向搅拌10分钟以上,直至大米煮成晶莹剔透的柳絮状;
  • 10.这时就可以放入胡椒粉调味了;
  • 11.接着放入鸡精搅拌均匀后关火,喝之前入盐调味;
  • 12.最后放入香菜碎就大功告成。
