蝶豆花粉蒸蛋糕
做了一个n次不同的自配方蒸蛋糕零失败。今天首次使用蝶豆花粉蓝颜色蒸蛋糕效果依然不错。白底蓝花图案清晰,膨松柔软,香甜绵软、入口即化。

  • 食用油20g
  • 白糖50g
  • 牛奶60g
  • 蝶豆粉少许
  • 白醋几滴

Steps to make 蝶豆花粉蒸蛋糕

  • 1.将蛋黄与蛋白分离在两个无油无水的容器中,蛋黄中加入10白糖搅拌均匀。
  • 2.加入食用油后再搅拌均匀。
  • 3.加入牛奶继续搅拌均匀。
  • 4.筛入大米粉翻拌均匀。
  • 5.将蛋打到细泡状,加入1/2的糖接着打发。
  • 6.打至粘稠状放入剩余的白糖继续打发。
  • 7.蛋白糊打发完成。
  • 8.将1/3蛋白糊放入蛋黄糊中翻拌均匀。
  • 9.再将蛋黄糊倒入剩余蛋白糊中翻拌均匀。
  • 10.将蛋糕糊分成两份。
  • 11.其中一份加入少许的蝶豆粉(先在碗中加一点点水拌匀,比较稠的状态)
  • 12.用的是网购的蝶豆花粉。
  • 13.先放一大勺本色蛋糕糊,再加入一勺蝶豆花糊,以此类推。
  • 14.以至两色蛋糕糊全部叠加完成,表用筷子随意划几下即出图案,震出气泡。
  • 15.锅中水先烧开,将覆膜的蛋糕模具放入蒸锅中蒸25至30分钟,关火后3至5分钟再打开锅盖。
  • 16.打开锅盖,蛋糕已蒸制完成,准备出锅(只用了2个鸡蛋就做了个大蛋糕值了!)。
  • 17.取出模具,去掉覆膜。
  • 18.晾一会蛋糕模具四周会自动分离,很好取出。一款漂亮的蝶豆花粉蒸蛋糕成品膨松柔软,白底蓝花图案清晰美观、口感膨松香甜、入口即化。
