抹茶冰皮月饼
快到中秋了,从来没有做过冰皮月饼的我也学着做了一把!没有想象中的好吃,哈哈,冰皮冻过后不软糯不Q,方子是网上很火还比较通用的方子!
模具用的果冻模,没有专门买啦,倒是方便!
不管怎么样,提前祝大家中秋快乐,人月两团圆吧!
这里是约20个的量!10个原味的,10个抹茶味的~

  • 粘米粉50g
  • 澄粉40g
  • 牛奶360g
  • 白糖80g
  • 沙拉油40ml
  • 豆沙馅400G

Steps to make 抹茶冰皮月饼

  • 1.将材料全部放在一个大碗里,混合成均匀无颗粒的面糊
  • 2.将面糊放入锅里隔水蒸15分钟,开始蒸的时候用筷子搅拌一下,防止面糊沉淀、水份分离,待面糊熟后拿出晾凉备用
  • 3.把面团分为两份,其中一份加入适量的抹茶粉和匀;另一份不用添加,为原味;
  • 4.在手上和案板上撒少许糕粉(即炒熟的糯米粉)防沾,并将冷却后的面糊揉成面团,分割成25克左右一份的小团
  • 5.红豆沙是自己做的,处理成20克的豆沙团;
  • 6.把面团按成圆扁状,包入豆沙,捏紧收口,将包好馅料的团子滚上一层糕粉,放入月饼模具中压制成形,
