[浙菜] 苦瓜如意虾
苦瓜营养十分丰富,所含蛋白质、脂肪、碳水化合物等在瓜类蔬菜中较高,特别是维生素C,居瓜类之冠。苦瓜还含有粗纤维、胡萝卜素、苦瓜甙和多种矿物质、氨基酸等。苦瓜有清暑除烦、解毒、明目、益气壮阳的功效,其所含的苦瓜多肽类物质有快速降低血糖的功能,能够预防和改善糖尿病的并发症,被赞誉为“植物胰岛素”。
虾仁入菜在各菜系都有的,相信大多数人都喜欢(除了对海鲜过敏的就没办法了)。这菜是从厨房小强那学的,清爽鲜美,还可以对付家里挑食的小朋友,菜名寓意也很好,作为宴客菜也是上档次的。

Steps to make [浙菜] 苦瓜如意虾

  • 1.苦瓜切成一厘米长的段,去瓤,挖成中空,撒上盐,腌15分钟腌出苦水。
  • 2.虾仁用料酒和太白粉腌10分钟。
  • 3.腌好的苦瓜用水冲洗干净。
  • 4.取两只虾仁“背靠背”穿过苦瓜圈,逐个穿好,摆放在盘中。
  • 5.锅放水烧开,把苦瓜虾仁放入。
  • 6.大火蒸5分钟。
  • 7.将盘中汁水倒入小锅内,再加入2大匙鸡汤烧开,放少许糖,用淀粉水勾薄芡。
  • 8.把芡汁浇在菜上即可。
  • 9.微苦带甜,鲜香美味。
