白灼虾Scalded Prawns,广州人喜欢用白灼之法来做虾,为的是保持其鲜、甜、嫩的原味,然后将虾剥壳蘸酱汁而食。“白灼”是粤菜的一种烹调技法,就是用滚水或汤将食物烫熟。

  • 1.先把虾洗净。
  • 2.控干水分。
  • 3.锅里放水烧开,放入料酒。

  • 5.把虾淖熟,盛出来控干水分。
  • 6.把葱切成细丝,姜切成末,辣椒切成丝。
  • 7.用旺火把油烧热,浇在辣椒丝上。
  • 8.再加入生抽、麻油、葱丝、姜末、盐拌匀。
  • 9.把虾摆入盘中,配着味碟上桌。即可享用。
