  • 高筋粉250克
  • 细砂糖35克
  • 可可粉15克
  • 170克
  • 3克
  • 酵母3克
  • 黄油25克
  • 糯米粉140克
  • 牛奶240克
  • 玉米淀粉40克
  • 细砂糖60克
  • 黄油20克
  • 蔓越莓干30克

Steps to make 【可可麻薯软欧】

  • 1.将麻薯食材中除黄油外的食材混合成糊状,放入蒸锅里,大火蒸30分钟至完全凝固状态。
  • 2.取出蒸熟的麻薯面团,冷却至微温状态时加入20克黄油,揉成光滑的麻薯面团。
  • 3.盖上保鲜膜,放入冰箱冷藏备用。
  • 4.将除黄油外的面团食材放入面包机,启动一个揉面程序,揉面20分钟。
  • 5.放入软化的25克黄油,再次启动,揉面20分钟,面团揉至扩展阶段。
  • 6.用发酵程序,将面团发至两倍大。
  • 7.取出可可面团,排气。将麻薯面团及可可面团分别分成三等份,盖上保鲜膜,松弛10分钟。
  • 8.将可可面团擀扁成椭圆形,麻薯面团放在可可面团上,压开成稍细的椭圆形,并撒上少许蔓越莓干。
  • 9.将面团卷起来,捏紧收口,放入烤盘,放入烤箱进行二次发酵。
  • 10.发酵至两倍大,取出,筛上高筋粉,用刀片割出纹路。
  • 11.烤箱上下火180度预热5分钟后,放入中层,烘烤20分钟,香气四溢即可出炉,冷却后切片吃用。
