草莓慕斯蛋糕
前天女儿说要吃草莓蛋糕,但是这种时候,
我找不到草莓买……,,刚好家里囤有几包
果味粉。有草莓味的哦

Details of ingredients

  • 海绵蛋糕体1个
  • 牛奶30mL
  • 淡奶油200g
  • 蛋黄液20g
  • 白糖20g
  • 吉利丁片1.5片(5g/片)
  • 草莓果味粉10g

Steps to make 草莓慕斯蛋糕

  • 1.模具外包好锡纸,垫上蛋糕片,吉利丁片提前用冰水泡软,沥干水备用
  • 2.牛奶+40mL淡奶油混合,放小火加热至微沸(锅边冒小泡泡)的状态
  • 3.将蛋黄加白糖混合均匀,加入草莓果味粉拌均匀
  • 4.把加热过的牛奶液慢慢倒入蛋黄液中,边倒边不停地搅拌混合
  • 5.混合好液体再回锅回执至微沸(锅边冒小泡泡)的状态
  • 6.过滤一遍
  • 7.加入沥干水的吉利丁片,拌至吉利丁片融化,放晾备用,即是英式奶油霜
  • 8.200g淡奶油打发至出现纹路,不可流动的状态(不要打发到裱花状态)。与英式奶油霜混合均匀即是慕期液
  • 9.倒入慕期液
  • 10.放冰箱冷藏一晚上凝固再取出食用
  • 11.制作镜面果胶:一包QQ糖,加适量开水,搅拌融化。放晾后倒入已凝固的慕斯上,再冷藏至果胶也凝固即可!
  • 12.不喜欢果胶的不做也不影响吃着……
