补肝明目,养血——湘菜爆炒猪肝
怎样选购猪肝:

猪肝营养丰富,味道颇佳,很受食者喜爱。猪肝有粉肝、面肝、麻肝、石肝、病死猪肝、灌水猪肝之分。前两种为上乘,中间两种次之,后两种是劣质品。

粉肝、面肝:质均软且嫩,手指稍用力,可插入切开处,做熟后味鲜、柔嫩。不同点,前者色如鸡肝,后者色赭红。   

麻肝:反面有明显的白色络网,手摸切开处不如粉肝、面肝嫩软,做熟后质韧,嚼不烂。

石肝:色暗红,质比上列三种都要硬一些,手指稍着力亦不易插入,食时要多嚼才得烂。   

病死猪肝:色紫红,切开后有余血外溢,少数生有浓水泡。卖者挖除后,虽无痕迹,但做熟后无鲜味,因做汤、小炒加热时间短,难以杀死细菌,食后有碍身体健康。   

灌水猪肝:色赭红显白,比未灌水的猪肝饱满,手指压处会下沉,片刻复原,切开处有水外溢,经过短暂高温亦会带有细菌,不利于健康。

    Steps to make 补肝明目,养血——湘菜爆炒猪肝

    • 1.主料猪肝。猪肝在自来水下冲洗5分钟后浸泡在清水中两小时以上,中间换2次水。
    • 2.配料;姜,蒜苔,辣椒。
    • 3.处理好的猪肝切成片。
    • 4.在切好的猪肝中加入适量淀粉、老抽、料酒、茶油。 猪肝和调料搅匀备用。
    • 5.辣椒去蒂和籽切成块,姜切成片。
    • 6.蒜苔清洗干净去头尾切成段。
    • 7.锅烧热,放茶油加入姜爆香。
    • 8.放入猪肝大火爆炒至变色。
    • 9.将猪肝推至锅边,加入蒜苔翻炒。蒜苔颜色加深,稍变软时合着猪肝一起翻炒至猪肝边缘稍卷。
    • 10.加入辣椒、适量盐翻炒均匀出锅
