  • 粟粉30g
  • 60g
  • 鸡蛋6个
  • 黄油50g
  • 柠檬汁少许

Steps to make 蔓越莓蛋糕干

  • 1.黄油隔水融化
  • 2.在蛋黄中加入黄油和10克糖
  • 3.充分搅拌均匀
  • 4.低筋粉和粟粉(也就是玉米淀粉)拌均匀过筛2遍
  • 5.然后筛入蛋黄液中
  • 6.翻拌均匀
  • 7.蛋白中加入柠檬汁
  • 8.打蛋器低速搅拌至起大泡加入15克白糖
  • 9.转高速搅拌至泡沫比较细,再加15克糖
  • 10.高速搅拌至泡沫细腻后加剩余的糖
  • 11.继续高速搅拌至纹路很明显时转低速
  • 12.直到提起打蛋器有直直的三角,蛋白就打发完成
  • 13.取1/3蛋白加入蛋黄糊中
  • 14.翻拌均匀
  • 15.倒回到剩余的蛋白中
  • 16.翻拌均匀后加入切碎的蔓越莓干,稍微翻拌均匀
  • 17.倒入烤盘中
  • 18.烤箱170度烤20分钟
  • 19.烤好后切块,晾凉即可。如果晾凉后比较软,可以低温再适当烘烤一会儿。
