卷饼、馒头的好搭档-----蒜香拌卤肉
夏天备上一锅老卤真的很方便,三天两头的卤个猪舌、酱个牛肉什么的,简简单单就能吃上。我这次卤的是猪肉,卤好以后做了蒜香味的凉拌,然后烙了些薄饼卷着吃。其实除了卷饼,用来夹馒头,也是很不错的。

Steps to make 卷饼、馒头的好搭档-----蒜香拌卤肉

  • 1.原料:猪肉和香菜。
  • 2.猪肉冲洗干净,先焯水,然后放入烧开的卤水中小火卤1小时,关火晾至冷却。
  • 3.如果没有老卤,就做新卤,取锅注入适量清水,加入配料生姜、葱白、花椒、干红椒、八角、桂皮、香叶、甘草、小茴、草果、丁香各适量,大火烧开,转小火慢慢地熬至香味四溢时再加入食物。详细步骤可见卤水猪舌。
  • 4.卤好的肉凉透后取出,戴上一次性手套,撕成小块放入碗中,调入蒜茸、生抽、香油、辣椒粉拌匀。
  • 5.加入香菜段。
  • 6.全部拌匀即可,卷饼,夹馒头都很好吃。
