爱上春天里的艾糍
每年清明前后,乡下的田间、山野会长出野生的艾草,其色泽翠绿,清香扑鼻。妈妈总会摘下艾草的嫩叶,做成香糯的艾糍,于是每逢春天我都多了一份期待,期待春天里的艾糍……

艾糍清香独特,不少人喜爱,姐也不例外,艾糍做法不难,口味咸甜皆可,可依个人喜好来做。将新鲜的艾叶烫软,捣烂后与糯米粉、粘米粉混合,揉制定型后清蒸而成。刚蒸好的艾糍软糯甜香,口感略微粘牙,带有淡淡的艾草清香,豆沙馅绵滑甜蜜,让这多雨的春天格外美好!

  • 1.洗净新鲜艾草,留叶去柄,放入沸水中汆烫至软,捞起沥干水备用。
  • 2.将艾草切成碎末,加入适量白糖搅拌均匀。
  • 3.将糯米粉、粘米粉和艾叶末一起,揉搓成不黏手的面团。
  • 4.将面团搓成长条状,切成均等的小面团。
  • 5.将小面团压扁,放入适量豆沙馅,收口后揉搓成圆形。
  • 6.取一模具,放入豆沙面团,印上花纹后脱模,放于锡纸片上。
