淡奶油小蛋糕
这款蛋糕是用红曲粉来造色,配方上则是用了大量的淡奶油,所以这款蛋糕的奶香味十分浓郁的,属于配方简单味道超赞款。我做了两盘,只用了3个蛋,蛋糕做出来松软有弹性,加了少量的红曲粉,所以颜色并不是很红,而是淡淡的粉色,红曲粉加多了会稍有苦味,所以调色即可,不多加,这样即好看又不影响口感。蛋糕太好吃,做好就被吃光光啦。

  • 低筋粉60g
  • 鸡蛋3个
  • 淡奶油100g
  • 白糖30g
  • 红曲粉3g
  • 柠檬汁几滴

Steps to make 淡奶油小蛋糕

  • 1.蛋黄蛋白分离,蛋黄和淡奶油一起放入盆里加5克的糖,搅拌均匀
  • 2.红曲粉和低筋粉混合,提前过筛2遍
  • 3.筛入奶油蛋黄液中翻拌至无干粉的状态
  • 4.蛋白放入无油无水的盆里,低速搅打至起大泡时加入约8克的糖
  • 5.继续搅打至泡沫变小,再加入约8克的糖
  • 6.待泡沫搅打的稍微细腻时加入剩余的糖,然后转高速搅打
  • 7.搅打至干性发泡,即提前打蛋器有直直的尖
  • 8.取约1/3的蛋白放入面糊中,翻拌的手法拌均匀。蛋白和面糊的明暗度相差太多,片片中面糊都看不出颜色了,太暗。
  • 9.把拌好的糊倒入剩余的蛋白中
  • 10.依然用翻拌的手法拌均匀
  • 11.然后倒入模具中
  • 12.烤箱上下火140度预热完成,入烤箱烤25分钟。
  • 13.烤好的贝壳样子的小蛋糕,用的不沾模具,很好脱模的
  • 14.掰开可可,蛋糕成粉红色,很松软,偶尔有个大气泡,也是戚风蛋糕的标志哦
