全麦坚果吐司

  • 烘焙奶粉11克
  • 鸡蛋22克
  • 坚果50克

Steps to make 全麦坚果吐司

  • 1.中种 :高粉195克,水115克,酵母3克中种材料全部混合.揉至无干粉状态后,盖上保鲜膜放冰箱冷藏17小时以上
  • 2.把主面团材料里除黄油以外的全部材料放进和面缸,中种面团扯成小块,一起揉至出膜后,加入黄油继续揉至完全扩展状态,最后加入切碎的坚果,搅拌均匀即可
  • 3.出膜状态的
  • 4.然后盖上保鲜膜,在30度环境中放置30分钟后,可进行操作
  • 5.面团用擀面杖排气,并分成三份,盖上保湿纱布,松驰15分钟
  • 6.开始整形:面团擀成长方形,然后如图
  • 7.把面皮二边分别向中间折
  • 8.尽量整齐哦然后自上而下卷起来
  • 9.放土司盒里
  • 10.烤前发酵(即二次发酵)把土司盒放入烤箱中,开户发酵功能,并放一杯开水,   时间约45分钟,发到土司盒9分满,此时轻按面团,很有弹性,能迅速回弹即可
  • 11.烘烤:刷上蛋液,上火170度,下火210度,下层,40分钟左右
  • 12.全麦坚果吐司
