杂锦豆腐
时时做豆腐,方法总是换来换去,发现杂锦豆腐也挺好吃,口感也好,于是就集中材料去做。此菜都是素食材料,素食者也可享用的,时不时吃些斋菜清清肠胃也挺好。

Details of ingredients

  • 北豆腐450克
  • 水发木耳1/2杯
  • 水发冬菇粒1/2杯
  • 豇豆粒1/2杯
  • 玉米1/2杯
  • 红萝卜约20片
  • 1/4茶匙
  • 胡椒粉1/3茶匙
  • 玉米淀粉 1汤匙
  • 麻油1茶匙

Steps to make 杂锦豆腐

  • 1.把材料切成丁或小片;
  • 2.准备好碗汁,碗里放清水1/3碗,盐1/3茶匙,胡椒粉1/3茶匙,糖1/4茶匙,鸡精1/2茶匙,搅拌均匀;
  • 3.豆腐改刀成小方块,放入浇开水的锅,加盐1.5茶匙,大火煮约5-7分钟,让豆腐有点底味和去豆腥;
  • 4.捞起豆腐后再把水烧开,放冬菇、木耳、豇豆和玉米焯水,焯完后捞起滤水;
  • 5.锅置炉上,开中高火,锅热后加适量菜油,倒入红萝卜煸出色来;
  • 6.倒入焯过水的配料,翻片刻,再倒入碗汁,烧开;
  • 7.倒入豆腐,撒麻油1茶匙,轻轻翻均匀即可出锅。
