比管鱼酱炒青椒
笔管鱼形状奇特,它是一种体型细长的墨斗鱼,青岛当地就叫它比管鱼;
十月起,比管鱼开始大量上市,趁着新鲜的上市,
而且基本都带着籽,换着花样多吃点,
8过价格一年比一年贵,
现在我用的这大小的比管鱼,10元一斤

Steps to make 比管鱼酱炒青椒

  • 1.比管鱼洗净,剪开布袋,取出墨囊和软刺,待用;
  • 2.青椒洗净,去籽,切成稍粗的丝,待用;
  • 3.起锅放水,放入葱姜,大火烧开,分批放入比管鱼,
  • 4.一边用筷子翻拌着,以免烫老了,看比管鱼卷缩,立刻捞出;
  • 5.焯水后的比管鱼
  • 6.另起一锅,锅中放适量的植物油,油热放蒜末爆出香味,
  • 7.下入黄豆酱翻炒,炒出香味至黄豆酱颜色变深;
  • 8.放入青椒丝翻炒,炒至青椒变软,
  • 9.放入已焯水的比管鱼,快速翻炒;
  • 10.炒至比管鱼沾满酱汁,即可盛出享用;
  • 11.还有鲜美的籽
