Steps to make 菊花里脊

  • 1.里脊肉先冷动一会,稍硬即可,比较好切,先橫着切片但底部不能切断,如果切不好可以用筷子垫在底部,
  • 2.再竖过来切条,个人感觉还是细点比较好看,但要注意底部千万别切断
  • 3.小碗打入鸡蛋清,放入切好的肉,加入盐.料酒.花椒水,用手抓一下,淹十分钟
  • 4.放入淀粉盆中,沾上淀粉,沾上后抖落抖落,反复几遍,沾满
  • 5.油温七-八成热时入油锅中炸,可以用筷子夹住底部,下入定下形,这样可以使菊花散开,定形炸一会后,捞出,复炸一遍再
  • 6.炒勺留底油,下入番茄酱煸炒一下,要小火,加糖.醋加适量水,熬到起小泡时加一点水淀粉
  • 7.把番茄酱汁浇到炸好的菊花肉是即可
  • 8.装饰上花叶
