樱桃派
今年的车厘子似乎比以往便宜,每天都往家里买,似乎有点吃伤了,于是把车厘子做成派馅,味道比直接吃更美味。

  • 玉米淀粉15克
  • 柠檬汁5克
  • 低筋面粉200克
  • 黄油80克
  • 蛋黄1个
  • 60克

  • 糖粉20克

Steps to make 樱桃派

  • 1.新鲜车厘子洗净后去核,分成两半。
  • 2.倒入60克糖、120克水、5克柠檬汁,拌匀后浸泡20分钟。
  • 3.倒入奶锅,一边煮一边搅,让糖完全融化,大约时间3分钟,将车厘子沥干水份,煮过车厘子的水留在锅中。
  • 4.玉米淀粉和30克水混合后,倒入车厘子水中.
  • 5.边煮边搅,煮到浓稠状态关火,煮好的汁水倒回滤完水的车厘子里,拌匀即成车厘子派馅,放凉后备用。
  • 6.一个蛋黄加60克清水、1克盐、20克糖,搅拌均匀。
  • 7.盆里加入低筋面粉和室温软化好的黄油。
  • 8.倒入蛋黄液,揉成面团。
  • 9.将面团装入保鲜膜,放入冰箱冷藏1小时以上。
  • 10.在面团上下各放一个保鲜膜,隔着保鲜膜将面团擀开。
  • 11.将派皮压在派盘上,用压模压紧派皮。
  • 12.用擀面杖把多余的派皮压掉。
  • 13.用叉子或者牙签在派皮上扎上小孔,避免在烤的过程上派皮膨胀。
  • 14.在派皮上放锡纸,压上石子或者豆子。
  • 15.烤箱预热200度,烤15分钟。
  • 16.把车厘子派馅铺在派皮上,放入烤箱180度再烤8-10分钟。
  • 17.放入烤箱180度再烤8-10分钟。
