    Steps to make 宫保鸡丁

    • 1.鸡肉切丁后加入料酒、淀粉、盐腌制上浆。 干辣椒和葱切段,姜切片待用
    • 2.用开水冲泡花生米,剥去外皮,冷锅冷油下花生米(不易炒焦),中火炒至浅焦黄色后盛到大盘里散热待用。
    • 3.锅中留底油,烧热后将花椒和干辣椒小火炸出香味,再加入豆瓣酱、姜片、大葱段爆锅。
    • 4.将鸡丁滑炒变色,再放入熟花生米翻炒均匀。出锅前加入适量生抽和盐即可。
    • 5.上桌啦。
