  • 花椒20g
  • 黄酒100g
  • 香叶3g
  • 食盐5g
  • 米醋150g
  • 生抽50g
  • 白糖80g
  • 白醋50g

Steps to make 酱焖鲫鱼

  • 1.野生鲫鱼洗净,去内脏、去鳞、去头和尾用清水和白醋洗净.葱段、姜片、食盐、黄酒腌制十五分钟。
  • 2.腌制完毕,拣出葱段、姜片用淀粉和面粉(比例为1:2)抓糊。
  • 3.坐锅,将油烧热大约六成,下入鲫鱼炸至全身金黄。
  • 4.另起锅,把猪肥肉丁中小火煸出油。
  • 5.葱段、姜片、蒜瓣、花椒大料下入锅中煸炒出香味。
  • 6.东北大豆酱一定要下锅炒出香味。
  • 7.这样焖制出来的鲫鱼才会有回味。
  • 8.米醋、酱油、白糖、黄酒勾兑成碗汁。
  • 9.鲫鱼铺好锅内后浇上碗汁,放上香叶,加开水至刚刚没过鲫鱼。大火烧开,小火焖1.5小时。
  • 10.酥脆鲜香,回味无穷的酱焖鲫鱼就做好了。
