【新月香草酥饼】藏匿在香草糖中的甜蜜酥饼
新月香草酥饼
香喷喷的香草味道,依稀可见的香草籽
脆脆的饼干,一口酥

吼吼...感觉这是我做过“最丑”的一款饼干
原方来自《最全面的点心教科书》
因为模样很像,一轮“弯月”所以得名“新月香草酥饼”

这款饼干对黄油在操作过程中得温度要求比较严格,尽可能快速的完成每一步
如果有料理机,建议使用
我觉得操作更方便,简单,成功率比全手工高,推荐
做法:
1.粉类和黄油倒入机器,搅拌黄色松散颗粒后加入糖和盐继续搅拌
2.黄色松散颗粒后加入糖和盐继续搅拌
3.加入蛋黄,搅拌成团状即可(千万别搅过头)

  • 低筋面粉62.5g
  • 杏仁粉32.5g
  • 细砂糖20g
  • 蛋黄10g
  • 一小撮

Steps to make 【新月香草酥饼】藏匿在香草糖中的甜蜜酥饼

  • 1.准备原料 黄油切1-2cm方块;粉类可提前冷藏保存
  • 2.粉类混合过筛入大碗中(操作台会更方便制作)
  • 3.黄油加入粉类中,刮板快速搅拌混合,直到整体变成黄色,松散的状态
  • 4.加入细砂糖和盐,混合均匀
  • 5.加入蛋黄,充分混合均匀(也可在操作台用手掌按压)
  • 6.取小部分面团,分割成5g一个,依次分割完成
  • 7.搓成7-8cm棒状,再弯成新月形状
  • 8.烤箱中层 上下火 170度 12-15分钟
