冰皮月饼

  • 糯米粉50克
  • 豆沙280克
  • 粘米粉40克
  • 生粉30克
  • 牛奶200毫升
  • 糕粉少许
  • 炼乳少许
  • 白砂糖50克
  • 植物油两勺

Steps to make 冰皮月饼

  • 1.准备好所需要的原材料。
  • 2.把牛奶、白砂糖、炼乳少许、植物油混合在一起倒进容器里,搅拌均匀。
  • 3.把粉类混合在一起,倒在牛奶混合物里,用铲子上下搅拌均匀,成稀稀的面糊状。
  • 4.把面糊倒在一个大碗里静置十分钟。
  • 5.面糊放在蒸锅笼屉上,开火蒸15分钟,蒸的过程中搅拌两次。
  • 6.正好的面糊成为粘稠的面团,用筷子搅拌均匀,凉至不烫手。
  • 7.把凉好的面团撒少许的糕粉,揉成光滑的面团。
  • 8.把揉好的面团分成小剂子,每个要60克(我的模具是100克的),皮和馅的比例我用的是6:4。
  • 9.把豆沙馅分成小份,每份要约40克。
  • 10.取一块小面团用手掌按扁,成小圆饼状。
  • 11.取一个豆沙团放在小圆饼上面。
  • 12.用左手的虎口,慢慢往上推皮包住馅料,捏进口。
  • 13.月饼模具里放入少许糕粉防粘,晃匀后把糕粉磕出来。
  • 14.将包好的豆沙团放进模具里。
  • 15.向下压模具,不要太使劲,悠着点。
  • 16.将月饼磕出来就可以了,放在冰箱冷藏,吃的时候口感更好。
