【浙菜】龙井虾仁
龙井虾仁,顾名思义,是配以龙井茶的嫩芽烹制而成的虾仁,是富有杭州地方特色的名菜。虾仁玉白,鲜嫩;芽叶碧绿,清香,色泽雅丽,滋味独特,食后清口开胃,回味无穷,在杭菜中堪称一绝。正宗的龙井虾仁采用的是清明前后的鲜活河虾,那时候的河虾个头大,味道鲜。不过,这是的河虾已经过了季节,也可以用鲜活的对虾代替,味道一样不错。

  • 1.活虾一斤洗净
  • 2.将虾去壳洗净,用厨房纸吸干水分。
  • 3.加盐和蛋清,用筷子搅拌至有粘性时,放入干淀粉拌和上浆。
  • 4.取茶杯一个,放上上等的龙井芽茶,用85度的开水100克泡开(不要加盖),放3分钟,滤出一半茶汁,剩下的茶叶和汁待用。
  • 5.起油锅,油温5成热时,下虾仁滑油,十几秒钟就行了。
  • 6.滑过油的虾仁盛起待用。
  • 7.锅里留底油,下姜葱爆香,然后将它们取出。
  • 8.下虾仁快速煸炒
  • 9.加入茶叶茶汤,炒匀就行了。
  • 10.鲜嫩清香的龙井虾仁OK了。
