舌尖上的芒果浮云卷
浮云卷,又称MOF卷,是来自MOF的甜点大师创作发明的,其口感细腻轻盈,入口即化,有着浮云一般的感觉。
曾经这个卷卷风靡烘焙圈,大家对它的称赞十分的高,即便是现在,还是很多烘焙爱好者的大爱。
春天里,做上一道这样的甜品,配上红茶,和闺蜜相约是最好不过了。
以下配方中主料为蛋糕卷食材,辅料为内卷夹馅材料

  • 蛋清4个
  • 糖粉80克
  • 牛奶280克
  • 低粉45克
  • 淡奶油245克
  • 芒果2个
  • 糖粉22克
  • 巧克力币4片

Steps to make 舌尖上的芒果浮云卷

  • 1.将蛋黄和20克的糖粉混合,搅拌均匀
  • 2. 淡奶油+牛奶煮沸
  • 3.将煮沸的牛奶淡奶油倒入蛋黄中,搅拌均匀
  • 4.加入过筛的低筋面粉,然后隔水加热
  • 5. 当蛋黄糊变稠,立刻离火,放入装有冷水的盆中降温
  • 6. 蛋白+60克糖粉打至湿性发泡状,提起打蛋器是弯钩状
  • 7.将蛋白霜与之前的蛋黄糊切拌均匀
  • 8. 拌好后的样子
  • 9. 倒入烤盘,170度烘焙22分钟,转180度烘焙8分钟
  • 10.淡奶油+糖粉打发,芒果切块
  • 11.烤好的蛋糕坯冷却后抹淡奶油,放入芒果丁
  • 12. 卷起后冷藏至少两小时,融化巧克力,挤出线条状
