云南临沧风味(水生)
上面这个就叫水生。是我们临沧凤庆年猪饭里会准备的一道凉菜,其实又叫凉拌水腌菜,上面白色的是这个是用香油炒出来的里脊肉,年猪饭里的水生拌的是生肉,比较生猛,吃年猪饭里的水生会准备好一种拌生肉,一种拌熟肉。在城市里吃生肉可需要一翻勇气的,所以把肉炒熟了拌进去。

水腌菜是用苦菜和萝卜丝泡的,也是很简单的泡菜,苦菜和萝卜丝洗净沥干水份,装到干净不沾油的容器里,再把米汤用纯净水兑清,到进容器,没过菜顶,泡个一星期左右,泡菜就成了!

粉丝的话超市里就有卖,依个人口味添加,可以用粉丝也可以用粉条,我用的原生态无添加的旱藕(芭蕉)粉丝,吃起来和粉丝一样滑爽筋道。

    Steps to make 云南临沧风味(水生)

    • 1.旱藕粉丝用烫水烫熟,放到纯净水里再泡半小时左右,细细的粉丝就变得像米线一样粗了。
    • 2.水腌菜是用苦菜和萝卜丝泡的,也是很简单的泡菜,苦菜和萝卜丝洗净沥干水份,装到干净不沾油的容器里,再把米汤用纯净水兑清,到进容器,没过菜顶,泡个一星期左右,泡菜就成了!
    • 3.水腌菜和粉丝放进碗里。
    • 4.黑芝麻用炒锅烤熟。
    • 5.撒到水腌菜和粉丝里。
    • 6.切上青笋丝。
    • 7.切上小米辣。
    • 8.放上油辣椒、花椒、酱油、盐。
    • 9.凉拌出来,到这步的时候已经可以吃了。
    • 10.里脊肉剁成肉末,鲜姜剁成末,撒适量的盐和里脊肉拌匀。
    • 11.用香油炒熟。
    • 12.炒熟的里脊肉、香菜放入拌好的水腌菜粉丝里一起拌匀即可。
